About the Role

The Senior Chef de Partie position at Bright Placements (PTY) Ltd in Hermanus requires an exceptional culinary expert with experience managing a section while assisting in overall kitchen operation. The ideal candidate will possess creativity, leadership skills, and the ability to work efficiently while supporting senior chefs in delivering high-quality dining experiences according to Grootbos’ kitchen standards.

Key Responsibilities

  • Running and overseeing specific sections in the kitchen (Larder, Veg, Grill, Pastry, Pass)
  • Preparing dishes to the highest standard within timeframes
  • Maintaining consistency in taste, portion size, and presentation
  • Adapting meals for special dietary requirements and guest preferences
  • Making mise-en-place always freshly prepared and on time
  • Cooking dishes according to menus, recipes, and guest preferences
  • Assisting in creating new recipes and menu items based on seasonal availability and local sources
  • Enforcing food and hygiene, health, and safety standards in the kitchen
  • Monitoring stock levels for sections and minimizing food waste
  • Ordering, receiving, storing, and rotating kitchen supplies
  • Working under guidance to improve skills and techniques
  • Delegating tasks effectively to ensure smooth operation during busy hours
  • Training and mentoring Commis Chefs, Demi Chefs, Chef de Partie

Requirements

  • Former culinary qualification with at least 5+ years of professional kitchen experience or relevant experience in a professional kitchen environment
  • Previous experience as a Chef de Partie, preferably in lodge hotel fine dining environments
  • Expertise in managing a specific section with minimal supervision (Larder, Veg, Grille, Pastry, Pass)
  • Strong knowledge of food preparation and techniques
  • Strong leadership, communication, problem-solving skills
  • Ability to work independently and under pressure
  • Passion for cooking
  • Good teamwork and communication skills
  • Knowledge of food safety, hygiene, and stock management
