About the Role
The Senior Chef de Partie position at Bright Placements (PTY) Ltd in Hermanus requires an exceptional culinary expert with experience managing a section while assisting in overall kitchen operation. The ideal candidate will possess creativity, leadership skills, and the ability to work efficiently while supporting senior chefs in delivering high-quality dining experiences according to Grootbos’ kitchen standards.
Key Responsibilities
- Running and overseeing specific sections in the kitchen (Larder, Veg, Grill, Pastry, Pass)
- Preparing dishes to the highest standard within timeframes
- Maintaining consistency in taste, portion size, and presentation
- Adapting meals for special dietary requirements and guest preferences
- Making mise-en-place always freshly prepared and on time
- Cooking dishes according to menus, recipes, and guest preferences
- Assisting in creating new recipes and menu items based on seasonal availability and local sources
- Enforcing food and hygiene, health, and safety standards in the kitchen
- Monitoring stock levels for sections and minimizing food waste
- Ordering, receiving, storing, and rotating kitchen supplies
- Working under guidance to improve skills and techniques
- Delegating tasks effectively to ensure smooth operation during busy hours
- Training and mentoring Commis Chefs, Demi Chefs, Chef de Partie
Requirements
- Former culinary qualification with at least 5+ years of professional kitchen experience or relevant experience in a professional kitchen environment
- Previous experience as a Chef de Partie, preferably in lodge hotel fine dining environments
- Expertise in managing a specific section with minimal supervision (Larder, Veg, Grille, Pastry, Pass)
- Strong knowledge of food preparation and techniques
- Strong leadership, communication, problem-solving skills
- Ability to work independently and under pressure
- Passion for cooking
- Good teamwork and communication skills
- Knowledge of food safety, hygiene, and stock management
