Hluhluwe: Executive Chef

About the Role

We are seeking an experienced Executive Chef to join our team at a remote lodge in Hluhluwe, South Africa. The ideal candidate will be a hands-on individual with a strong background in high-end hospitality, able to deliver exceptional dining experiences while maintaining strict operational, hygiene, and cost controls in a remote environment.

Key Responsibilities

• Oversee full kitchen operations, ensuring consistently high standards of food quality, hygiene, and presentation
• Develop and implement creative 7-day menus in line with established food styling guidelines
• Train, mentor, and manage the kitchen team, maintaining strong leadership and discipline
• Manage all food orders, stock control, stock rotation, and storerooms, including fridges and freezers
• Monitor and control food costs, ensuring menus are costed and within budget parameters
• Oversee bush dining experiences, including banqueting, picnics, and game drive snacks
• Maintain kitchen hygiene standards, ensuring correct chemicals and cleaning materials are always in stock
• Implement and manage leftover control processes
• Conduct regular checks on food quality across all service points and camps
• Ensure smooth food logistics and transport, maintaining cleanliness and accurate checklists
• Work closely with lodge management, HODs, and suppliers to ensure seamless operations
• Maintain accurate administration, reporting, and staff records

Requirements

• Proven experience as an Executive Chef or Senior Sous Chef within a luxury lodge or hospitality environment
• Strong leadership and team management skills
• Excellent knowledge of food preparation, presentation, and kitchen hygiene standards
• Strong organisational and administrative abilities
• Good understanding of stock control, budgeting, and cost management
• Ability to work independently in a remote environment
• High attention to detail and commitment to service excellence
