Job Description
Candidate Responsibilities:
- Design seasonal menus with attention to guest preferences, dietary requirements, and locally available ingredients.
- Deliver plated meals of a fine-dining standard for breakfast, lunch, and dinner.
- Conceptualise and execute traditional boma dinners and special occasion menus.
- Prepare all meals to consistently high standards of quality, taste, and presentation.
- Create bespoke dining experiences for special requests (e.g., private dinners, celebrations).
- Incorporate creativity and flair while maintaining an authentic safari-lodge dining feel.
- Manage procurement, ordering, and supplier relationships.
- Oversee stock rotation, storage, and usage to minimise wastage and ensure cost efficiency.
- Maintain accurate records of stock levels and kitchen expenditures.
- Ensure the kitchen operates at the highest hygiene and HACCP/food safety standards.
- Maintain daily cleaning schedules and oversee compliance by kitchen staff.
- Supervise, train, and mentor junior kitchen staff to ensure smooth kitchen operations.
- Collaborate closely with lodge management and service staff to deliver seamless guest experiences.
- Work effectively in a remote lodge environment with limited resources and logistical challenges.
Candidate Requirements:
- Minimum 3–5 years’ experience as a Senior Chef or similar role in luxury lodges, boutique hotels, or fine dining restaurants.
- Strong skills in menu planning, plating, bakery, and boma-style cooking.
- Passion for guest interaction and delivering personalised dining experiences.
- Excellent organisational, communication, and leadership skills.
- Strong cost control and stock management abilities.
- Ability to work in a remote environment and adapt to challenges.
- Relevant culinary qualification preferred.
