About the Role

As a Regional Chef Trainer at Wild Dreams Hospitality, you will play a pivotal role in elevating food standards and guest experiences across multiple lodges. This position requires a culinary expert with extensive experience, passion for creating exceptional food, and a deep understanding of hospitality and sustainability. You will work closely with managers, suppliers, and training teams to promote local procurement, innovative food concepts, and exceptional guest experiences.

Key Responsibilities

  • Revise and update 7-day menus across lodges, following approved recipes and styling guides.
  • Adapt menus for special dietary needs and train chefs accordingly.
  • Conduct creative bush banqueting and meal presentation training.
  • Stay current with food trends and introduce new menus, recipes, and guest delight concepts.
  • Train chefs on costing, kitchen controls, waste management, and storytelling around local produce.
  • Rotate through lodges to upgrade food standards, quality, and presentation.
  • Promote local procurement and collaborate with suppliers.
  • Provide input on food and beverage projects, budgets, and styling guides.
  • Liaise with consultants on dietary requirements and integrate guest feedback.
  • Work closely with training teams, host workshops, and encourage chef exchanges.
  • Develop staff skills to support career growth and promotions.
  • Maintain strong communication with chefs, managers, suppliers, and guests.
  • Uphold discipline, fairness, teamwork, and flexibility while serving as a role model.

Requirements
