A 4* Hotel with over 120 rooms and two restaurants, banqueting for 400 pax, a coffee shop, and a fine dning restaurant seeks to employ an experienced Executive Chef with the following ESSENTIAL REQUIREMENTS! Matric Professional Cookery Diploma with HACCP knowledge Must have 5 years experience within a 4*/5 * hotel Currently be holding an Exec Chef or Chef de Cuisine at a 4*/5* hotel with over 150 rooms and banqueting for at least 400 pax Knowledge of costing, controls are a must, must be able to oversee multi-outlets The ideal candidate will need to have good staff management skills be able to mange costs and controls Own car and license will be a distinct advantage Responsibilities include: Write SOPs for every product and service that leaves the kitchen and then be diligent on the execution of all SOPs. You need to be the example. Submit monthly stocktakes on food and operational equipment. Achieve food cost monthly, and pass all hygiene assessments. Work hand in hand with the Food and Beverage Manager to ensure maximum controls and menu planning. Assist with development of the chefs through a skills assessment and then a structured on job training program. An UPDATED & detailed CV in MS Word format (starting with current position) is required, as well as a Recent head & shoulders photo, taken in the last 6 months.
