About the Role
We are seeking a skilled and passionate Chef de Partie to join our 5* wine estate in Franschhoek, where you will be responsible for assisting with mise-en-place preparation, monitoring food quality and presentation, and ensuring consistency with the standards set by the Head Chef.
Key Responsibilities
- Assist with mise-en-place preparation, including cutting meat and fish, cooking, and arranging food as instructed by the Sous – or Head Chef
- Monitor food quality and presentation, ensuring consistency with the standards set by the Head Chef, and escalating any issues as needed
- Assist in preparing food requisitions and coordinate inter-kitchen transfers
- Follow and enforce FIFO (First-In-First-Out) procedures for food storage and rotation to ensure freshness and minimize waste
- Ensure all food surplus is stored properly and safely at the end of each service
- Minimize kitchen waste and control food costs through effective portion control and reducing spoilage
- Assist in managing kitchen stock by participating in monthly inventory counts, ensuring accuracy and proper documentation
- Ensure proper handling and usage of kitchen equipment, utensils, and machinery, and provide training to staff when necessary
- Attend relevant meetings, training sessions, or courses to enhance your skills and performance within the kitchen
Requirements
- Grade 12 Diploma in Professional Cookery
- Minimum of 2 years experience in a similar position at a 5* property
- Ability to follow recipes and presentation of food and dishes as instructed
- Ensuring cleanliness of the kitchen is up to HACCP standards
- Ensuring the highest quality of food and fresh produce
Qualifications
- Formal education/certifications (e.g. National Diploma in Professional Cookery)
