About the Role
We are seeking an experienced and skilled Assistant Head Chef to join our team at Cedar Wood Recruitment. As a key member of our kitchen department, you will be responsible for assisting the Head Chef in the overall running of the kitchen, as well as taking on additional responsibilities when the Head Chef is away. This is an excellent opportunity to develop your skills and take on new challenges.
Key Responsibilities
- Assisting the Head Chef in the overall running of the kitchen department
- Running the kitchen department in its entirety while the Head Chef is on leave/absent
- Training the sous chef in new ideas for preparing 5* standard meals
- Menu planning: bringing fresh, new ideas forward with regards to menus
- Maintaining a good understanding of computers: kitchen admin and lodge system
- Producing meals of a 5* standard for lodge guests
- Menu planning for staff meals
- Orders/procurement for lodge food supplies
- Good communication skills within the team and with lodge food suppliers
- Maintaining the 5* standard of the department at all times
- Possessing good leadership skills to bring the kitchen department to the highest level
- Ensuring the highest standards in fine details of plating and producing 5* dining experiences
Requirements
- Strong culinary experience, preferably in a 5* establishment
- Excellent leadership and communication skills
- Ability to work well under pressure and manage multiple tasks
- Good understanding of kitchen administration and lodge systems
- Proficient in staff training, stock taking, ordering, stock rotation, supervising, quality control
Qualifications
- Formal education or certification in culinary arts (e.g. Baking & Pastry Arts, Hotel Management)
Salary & Benefits
- R 17 093.25 per annum (depending on experience)
- Excluding provident fund contribution and medical aid contribution of R1 471.67
- Gratuity (tips) included
- 36 days on, 12 days off work schedule
