About the Role
We are seeking a highly skilled and experienced Senior Sous Chef to join our award-winning restaurant at HotelJobs’ Stellenbosch Estate. As part of our team, you will be responsible for supporting the Head Chef in delivering exceptional culinary standards while managing a busy kitchen during lunch and dinner services. With a focus on modern and intricate authentic Italian cuisine, we are looking for someone who can bring creativity and expertise to our menu development and kitchen operations.
Key Responsibilities
- Manage and direct all aspects of food preparation, production, and culinary standards
- Compile and create new menus as required at least twice a year
- Plan and control orders, equipment, and ingredients, including receiving and storage
- Monitor and train all staff on kitchen hygiene, food preparation methods, and kitchen practices
- Be fully in charge of all hiring, managing, and training of staff, including scheduling, assessment, training, discipline, and motivation of the team
- Take on additional sustainability projects and make use of kitchen garden produce to reduce costs and enhance menu offerings
- Foster good relations with suppliers for preferred cost benefits
- Ensure ongoing culinary production consistency and standards with optimal use of staff resources
- Control up-to-date and highest levels of cleanliness of kitchen equipment and maintenance thereof
- Short-term and long-term planning in consultation with the General Manager
Requirements
- Fine dining experience from a reputable restaurant or hotel
- Proven track record of supporting Head Chefs in high-pressure kitchens
- Excellent culinary skills and creativity in menu development
- Strong leadership and management skills, including staff training and motivation
- Ability to work effectively under pressure and maintain high standards during busy services
Qualifications
- Formal education in culinary arts or related field (e.g. Bachelors degree)
Salary & Benefits
- Competitive salary range: R800 000 – R1 200 000 per annum, depending on experience
