About the Role
Live-in accommodation provided, we are seeking an experienced Sous Chef to support our Head Chef in delivering exceptional culinary experiences at our luxury safari lodge in the North West. As a key member of our kitchen team, you will play a crucial role in ensuring high standards across all kitchen operations.
Key Responsibilities
- Assist the Head Chef in daily kitchen operations and menu preparation.
- Supervise; train, and mentor junior kitchen staff, including Chef de Partie and Commis Chefs.
- Ensure all dishes are prepared according to recipes, portion sizes, and presentation standards.
- Maintain high standards of food hygiene, health, and safety.
- Monitor stock levels, manage kitchen supplies, and minimise food waste.
- Assist in creating seasonal menu items and special event menus.
- Delegate tasks effectively to ensure smooth operation during busy periods.
- Support the Head Chef with administrative tasks, including ordering, inventory, and staff scheduling.
Requirements
- Proven experience as a Sous Chef in a luxury lodge, hotel, or fine dining environment.
- Strong culinary skills and technical knowledge across all areas of the kitchen.
- Leadership and mentoring abilities for junior kitchen staff.
- Knowledge of food safety, hygiene, and stock management.
- Ability to work under pressure, independently, and as part of a team.
- Flexibility to work shifts, weekends, and holidays.
Salary & Benefits
Salary: R12,000 per annum, live-in accommodation provided.
