About the Role
We’re seeking a highly experienced and commercially aware Head Pastry Chef to lead central bakery production across our luxury hospitality group in Cape Town. As part of our award-winning collection of restaurants and bars, you’ll be responsible for overseeing bakery operations that support multiple outlets, ensuring consistency, excellence, and efficiency across the portfolio.
Key Responsibilities
- Oversee central bakery production across all outlets, ensuring precision, systems, and consistency at scale
- Execute à la carte service for select menus and collaborate with chefs to develop new dessert concepts
- Develop and implement training programs for the pastry brigade, focusing on structured mentorship and junior chef development
- Manage multiple outlets simultaneously, maintaining calm under pressure while prioritizing tasks and deadlines
- Maintain detailed records of inventory, waste, and yield control to optimize food costs
Requirements
- Minimum 5 years’ experience in fine dining, luxury hospitality, or high-end production environments
- Proven experience running a bakery or pastry department at scale
- Strong technical foundation in bread, laminated doughs, plated desserts, and batch production
- Detail-oriented and process-driven with the ability to manage multiple tasks and deadlines
