Requirements Tertiary Culinary Diploma & Grade 12 Minimum 3 years experience as Sous Chef in a 5-star game lodge Strong knowledge of fine dining, bush meals, stock control, budgeting, and kitchen health & safety Ability to lead a team in the Head Chefs absence Creative, detail-oriented, and up to date with culinary trends Solid track record with contactable references Responsibilities Support the Head Chef with daily kitchen operations Ensure consistent high standards in food preparation and presentation Manage stock, food costs, and monthly stock takes Oversee mise en place and production across kitchen sections A food portfolio must be submitted with your application that clearly displays your creativity, innovation and attention to detail.
