About the Role
We are seeking an experienced Senior Sous Chef to join our team at a luxury 5-Star lodge, where you will be responsible for leading and managing the kitchen operations, ensuring high standards of food quality and safety, and supporting the development of innovative and creative food products.
Key Responsibilities
- Lead and manage the kitchen team, guiding and motivating employees to achieve exceptional results
- Oversee and direct multiple small teams, implementing policies, processes, and standards across the kitchen function
- Ensure compliance with health, safety, security, and other legal requirements across the kitchen operations
- Monitor and implement change, supporting people through times of transition
- Develop and maintain relationships with operational employees to influence operational decisions
- Produce a wide range of foods, including ethnic foods and special dietary requirement foods
- Implement and apply quality control measures to ensure high standards of food quality
Requirements
- Grade 12 (NQF Level 4) Degree and/or diploma in Culinary Arts
- Completed commercial cookery apprenticeship or equivalent
- 5 Years experience in a culinary leadership role
- Demonstrated extensive previous experience in a luxury 5-Star lodge, hotel, or cruise line environment
