About the Role
Craven Cottage CC is seeking an experienced Senior Sous Chef to join our team at Montagu. As a key member of our culinary leadership, you will be responsible for overseeing kitchen operations, leading and motivating staff, and ensuring high-quality food production.
Key Responsibilities
- Lead and manage kitchen employees
- Oversee and direct multiple small teams
- Ensure policies, processes, and standards are implemented and applied across the kitchen function
- Monitor compliance with health, safety, security, and other legal requirements across the kitchen operations
- Implement change and support staff through times of transition
- Develop innovative and creative food products
- Monitor lodge kitchen team performance
- Influence operational employees
- Communicate detailed information and instruction to others
Requirements
- Grade 12 (NQF Level 4)
- Degree and/or diploma in Culinary Arts
- Completed commercial cookery apprenticeship or equivalent
- 5 Years’ experience in a culinary leadership role
- Demonstrated extensive previous experience in a luxury 5-Star lodge, hotel, or cruise line environment
