Job Description

Luxury Hospitality Group with offices based in Dar es Salaam and Arusha is looking for a Cluster Executive Chef to oversee all culinary operations across multiple locations and outlets within the group, focusing on strategic planning, budgeting ; menu development and brand consistency. You will be responsible for managing menu development, food quality, staffing and financial performance (cost control) to ensure consistency and profitability. You will also act as the senior technical expert ; training kitchen staff ; ensuring HACCP safety compliance and driving brand-specific dining experiences across all locations. Duties: Develops unified food concepts, menus, and promotions across the cluster while ensuring brand standards are met. Oversees daily operations in all kitchens, banquets, and dining outlets within the designated properties. Responsible for managing food costs, menu engineering, purchasing, and achieving budgetary goals. Ensures strict adherence to HACCP, hygiene, and food safety standards through regular kitchen walk-throughs and inspections. Recruits; trains, mentors, and evaluates kitchen staff, including individual hotel Executive Chefs or Sous Chefs, to foster professional development. Collaborates with food & beverage managers, lodge management, and suppliers to improve service and efficiency. Requirements: Degree or diploma in Culinary Arts or equivalent certification. Proven experience (4+ years) in multi-property, 5* Lodge / resort environments. Strong culinary expertise, leadership abilities, financial acumen (P&L management), and proficiency in menu costing. Adaptable; innovative, strong communicator, and able to travel between properties.
