About the Role
Kendrick Recruitment is recruiting an exceptional Head Sous Chef for a highly regarded luxury boutique hotel in the Zululand region. This is a senior kitchen role suited to a strong all-rounder with refined fine-dining experience, excellent leadership ability, and a consistent, detail-driven approach to food standards and service delivery.
Key Responsibilities
- Support the Head Chef in overseeing daily kitchen operations and service flow
- Lead the kitchen in the Head Chef’s absence, ensuring consistent fine-dining standards
- Maintain high-level quality control on taste, presentation, and plating across all services
- Assist with menu planning, daily specials, and seasonal innovation
- Manage stock control, ordering, portion control, and wastage reduction
- Ensure strict hygiene, health, and safety compliance (HACCP principles advantageous)
- Train, mentor, and supervise kitchen staff, maintaining discipline and teamwork
- Manage dietary requirements and allergy procedures confidently and professionally
- Assist with stocktakes, reporting, and kitchen administration as required
Requirements
Proven Head Sous Chef or Senior Sous Chef experience essential
Exceptional fine-dining background, within luxury boutique hotels
Strong all-round culinary ability with a consistent, calm leadership style
Excellent organisation, attention to detail, and ability to work under pressure
Strong communication skills and ability to work closely with FOH and management
