About the Role
We are seeking an experienced and creative Pastry Head Chef to join our luxury game lodge in the Okavango Delta, Botswana. The successful candidate will take full responsibility for the pastry kitchen, ensuring the highest standards of quality, creativity, and presentation across all pastry offerings. We are looking for a hands-on leader who can manage daily kitchen operations, oversee menu development, maintain strict hygiene and safety standards, and mentor the pastry team while operating efficiently within budget parameters.
Key Responsibilities
- Manage and oversee the pastry kitchen operations, ensuring food quality meets luxury lodge standards.
- Design and develop creative pastry menus aligned with the lodges culinary concept.
- Prepare and supervise the production of a variety of pastry items including breads, croissants, pastries, desserts, ice creams, sorbets, cakes, and biscuits.
- Maintain the highest standards of food hygiene, safety, and kitchen cleanliness.
- Monitor food costs, control stock levels, and minimise wastage through effective ordering and stock rotation.
- Lead, train, and mentor the pastry team, supporting skills development and succession planning.
- Ensure all kitchen equipment is maintained and handled correctly to minimise damage and loss.
- Collaborate with other departments to ensure exceptional guest dining experiences.
Requirements
Professional Chef qualification (3 years) or a minimum of 4 years experience in a similar leadership role.
Strong pastry and baking expertise with a broad knowledge of modern pastry techniques.
Experience in luxury hospitality, fine dining, or high-end lodge environments preferred.
Ability to develop menus, calculate food costs, and manage kitchen budgets.
Strong understanding of kitchen operations, hygiene standards, and food safety procedures.
Proven ability to lead, train, and motivate kitchen staff.
Good organisation, time management, and communication skills.
Knowledge of dietary requirements and guest preferences.
Passion for hospitality and delivering exceptional culinary experiences.
