About the Role
We are seeking an experienced and skilled Head Chef to join our luxury lodge in Kruger National Park, South Africa. As a key member of our hospitality team, you will be responsible for leading our kitchen operations, managing staff, and ensuring exceptional food quality and presentation.
Key Responsibilities
- Manage and train kitchen staff to achieve high standards of food preparation and presentation.
- Implement and maintain written control documents and training manuals.
- Plan, budget, and administer departmental finances, including stock procedures and control.
- Maintain impeccable quality within the kitchen, adhering to current standards of legislation and compliance.
- Prepare budgets and aim to achieve budgeted gross profit for the department.
- Take complete responsibility for the profitability of the department.
- Manage and monitor all costs, implementing measures to control them.
- Implement and maintain constant communication between the Kitchen, Management, and Front of House staff.
- Ensure accurate stock control, stock take, and requisition procedures are followed according to par levels and company standards.
Requirements
- Minimum of 3-5 years previous Head chef experience in a 4/5-star environment.
- Food Hygiene and professional cooking qualifications (Essential).
- Good understanding of food and wine trends.
- Knowledgeable of all dietary and religious requirements.
- South African inspired food, with a touch of fine dining.
