Job Description

Role Summary We are looking for a dynamic, numbers-driven Restaurant Manager who thrives in a high-energy, design-forward, detail-obsessed dining environment. This role requires a powerful blend of floor leadership and financial discipline. You will be the custodian of service excellence and the guardian of stock integrity, cost control, reporting accuracy, and operational precision. If you are as confident with spreadsheets as you are with guests this role is for you. Core Focus Areas 1. F&B Financial Control & Administration (Primary Focus) You are fully accountable for the financial health of the restaurant. Maintain beverage cost at target percentage (non-negotiable) Full ownership of stock control systems and procedures Daily; weekly, and monthly stock takes Strict management of variances with immediate investigation and corrective action Monitor and report on: Beverage cost percentage GP margins Wastage Breakages Transfers Staff consumption Implement and enforce FIFO principles Maintain minimum stock holding without compromising service Accurate capturing of invoices and GRVs Tight control over ordering and supplier relationships Payroll control in line with turnover targets Identify cost leaks and plug them immediately Produce clear, structured weekly and monthly financial reports for senior management You do not react to variances you prevent them. 2. Operational Leadership Lead from the floor with confidence and presence Drive an unforgettable guest experience every service Ensure all SOPs are followed with discipline Set up and close down to immaculate standards Immediate resolution of guest concerns Maintain exceptional grooming and presentation standards Ensure all compliance and health & safety regulations are adhered to 3. Stock & Systems Champion This role demands someone obsessed with detail. Implement strict bar and beverage control measures Monitor par levels and prevent over-ordering Manage stock rotation and shelf-life precision Control high-value items with tight checks and balances Conduct random spot checks Minimise wastage through proactive management Oversee breakage logs and accountability Zero tolerance for in-efficient systems. 4. Team Leadership & Accountability Recruit; train and performance-manage a strong front-of-house team Conduct quarterly performance reviews Drive continuous product knowledge training Ensure 95%+ test scores on menu and beverage knowledge Lead daily briefings that are focused, energised and purposeful Manage disciplinaries professionally with correct documentation You build strong teams. Required Experience & Profile Minimum 5 years management experience in a premium, high-volume restaurant Minimum 10 years hospitality experience Strong financial acumen and F&B analytical skills Advanced stock control experience (non-negotiable) Experience managing beverage-heavy environments High attention to detail Strong administrative and reporting ability Comfortable working long hours in a fast-paced setting Calm under pressure Natural leader with authority and warmth Key Performance Indicators Beverage Cost maintained at target % Variances kept within acceptable thresholds Accurate and timely financial reporting Controlled payroll percentage Reduced wastage and breakages Strong GP margins 100% complaint resolution High staff retention and performance Culture Fit We operate in a high-standard, high-energy environment where: Precision matters Numbers matter Details matter Service is theatre Accountability is everything This is a hands-on leadership position requiring strength, discipline, and financial sharpness.
