About the Role
Kendrick Recruitment is searching for an experienced and hands-on Head Chef for a well-established, contemporary hotel in the heart of Durban CBD. The property forms part of an established African hospitality group, with a brand philosophy built around fresh, creative and seasonal cuisine.
Key Responsibilities
- Full oversight of all kitchen operations across restaurant, banqueting, conferencing and room service
- Menu planning and implementation across all service areas
- Food cost management, stock control, purchasing and supplier relationships
- Strict compliance with hygiene, food safety and regulatory standards (HACCP)
- Full team management including scheduling, training and performance
- Close collaboration with F&B and Sales to execute conferences, events and group bookings
- Contribution to departmental budgeting, forecasting and financial performance
Requirements
- Formal culinary qualification from a recognised institution
- Minimum 4 to 5 years’ experience as a Head Chef or Senior Sous Chef in a hotel environment
- Proven experience managing banqueting and conference catering (essential)
- Strong knowledge of food cost control and kitchen financial management
- Solid leadership experience managing medium to large kitchen teams

Salary & Benefits
- Gross Salary: R40,000 per month
- Pension: Old Mutual – 6% company contribution with 6% mandatory employee contribution
- Medical Aid: Discovery – 50% company contribution for employee and immediate dependants (not compulsory)
