About the Role
African Echoes Recruitment is seeking an experienced and passionate Assistant Head Chef to join our 5-Star hospitality property. As a key member of our culinary team, you will support the Head Chef in managing the kitchen and delivering exceptional dining experiences. This role requires a strong leader who can step into a full kitchen management role when required and maintain the highest culinary standards.
Key Responsibilities
- Assist the Head Chef in the overall management of the kitchen
- Take full responsibility for the kitchen when the Head Chef is absent
- Produce and maintain 5-Star standard meals and presentation
- Drive menu planning, introducing fresh and innovative ideas
- Oversee staff meals planning and preparation
- Manage stock control, ordering, procurement, and stock rotation
- Train and mentor junior chefs and kitchen staff
- Ensure consistent quality control and plating standards
- Maintain excellent communication with suppliers and team members
- Uphold the highest standards of hygiene, organisation, and kitchen efficiency
Requirements
- RSA ID and legal residence essential
- Proven experience in a 5-Star kitchen environment
- Strong leadership and team management skills
- Ability to run the kitchen independently in the absence of the Head Chef
- Experience in menu planning and food costing
- Strong knowledge of stock control, ordering, and kitchen administration
- Computer literacy and understanding of kitchen systems
- Excellent communication and organisational skills
- High attention to detail and passion for fine dining
Qualifications
- Formal education/certifications (e.g. culinary degree or equivalent)
