About the Role
J D Specialized Recruitment is currently assisting a new luxury Big 5 safari lodge in KwaZulu Natal to recruit a highly skilled and creative Pastry Chef to join their culinary team. This role suits a passionate and detail-oriented pastry professional who thrives in a five-star lodge environment and takes pride in delivering exceptional quality, consistency, and presentation across all pastry and bakery offerings.
Key Responsibilities
- Prepare, bake, and present all pastries, breads, desserts, and confectionery items to five-star lodge standards
- Ensure consistency in taste, texture, quality, and presentation across all dining outlets including restaurant service, banquets, and private dining
- Collaborate with the Executive Chef on new dessert concepts, seasonal offerings, and specialty menus
- Maintain strict adherence to recipes, portion control, and plating standards
- Supervise and coordinate the pastry section during preparation and service
- Train and support junior pastry staff to uphold operational and quality standards
- Monitor inventory levels, control wastage, and assist with ordering high-quality ingredients
- Ensure compliance with all health, hygiene, safety, and environmental standards
Requirements
- Formal culinary qualification with specialization in Pastry Arts preferred
- Proven experience as a Pastry Chef within a five-star hotel or luxury lodge environment
- Strong expertise in preparing pastries, breads, desserts, and confectionery to premium standards
- Demonstrated ability to develop seasonal menus and innovative dessert concepts
- Solid understanding of portion control, recipe adherence, and plating consistency
- Experience supervising and mentoring junior kitchen staff
- Good knowledge of stock control, food costing, and wastage management
- Sound understanding of South African health, hygiene, and food safety regulations
- Ability to work under pressure within a fast-paced luxury hospitality environment
