Job Description

Chef de Partie – Private Nature Reserve | Gansbaai | R12,000 – R18,000 Negotiable DOE | Live Out A private nature reserve in Gansbaai is seeking a dedicated Chef de Partie to take full responsibility for running a specific kitchen section. The role requires excellent culinary skills, leadership, and the ability to maintain high standards in a dynamic lodge environment. Key Responsibilities: Ensure all stocks are kept under optimum conditions. Prepare mise-en-place freshly and on time. Cook dishes according to recipes, portion sizes, and quality standards. Ensure dishes reach the hot plate or pass correctly garnished and presented. Maintain a clean and organised section at all times. Provide training, guidance, and support to junior cooks and trainees. Communicate any anticipated shortages promptly to the Sous Chef or Head Chef. Maintain discipline in the section, treating all staff fairly and courteously. Deputise in the Sous Chef’s absence and take charge of the kitchen when required. Attend training courses and seminars as needed. Engage in management study and professional development for future advancement. Package and Benefits: Salary negotiable, dependent on experience. Provident Fund (Old Mutual). Partial medical aid contribution. Uniform provided. Reporting Structure: Reports to: Executive Chef, Head Chef, and Sous Chef. Responsible for: All subordinate kitchen staff. Liaises with: Heads of Department.
