Company supplying Sushi to the retail & wholesale market based in Maitland; Cape Town is looking for an experienced and passionate Kitchen Manager / Lead Sushi Chef to join their team in their new dark kitchen. We are looking for someone who doesnt just “make sushi;” but understands the visual standards and precision required . You will be responsible for managing a fast-paced kitchen environment while ensuring every roll and bowl meets the high standards. This role is ideal for a dedicated professional who values quality; precision and leadership in a fast-paced culinary environment. Duties: Lead and manage daily kitchen operations to ensure efficiency and consistency Prepare and present high-quality sushi and other Asian inspired dishes Oversee inventory management, ordering and cost control Train; mentor and schedule kitchen staff Maintain strict food safety, hygiene, and sanitation standards Requirements: Grade 12 A trained sushi professional with a clear understanding of the science of rice, the precision of fish-cutting, and the “visual language” of premium sushi. Proven experience managing teams, including scheduling, conflict resolution, and performance tracking. Strong leadership, communication, and organizational skills Expert knowledge of food safety Ability to perform under pressure while maintaining high standards Commitment to teamwork and delivering exceptional guest experiences Reliable; and honest. Must have a valid drivers license and own reliable transport.
