2 x 5* Lodges situated in South Luangwa National Park in Zambia , 1h30 mins by road from Mfuwe, the closest town and airport. one lodge accommodates 24 and the second lodge 16 people. Both are extreemly well run and both have been reburbished in the last 2 years. The Lodges are run separately but the Executive Chef will oversee both kitchens and the successful person will be required to meet the following specifications:- Tertiary qualifications are a pre-requisite for work permits Minimum 3 years experience as Executive Chef in 4 or 5 * lodges or boutique hotel operations with over 30 rooms in Africa Good kitchen organisational skills and able to manage the kitchen staff Creative with regards to menu planning, menu plating, kitchen organisation, ingredients are seasonal and the chef needs to be very flexible in terms of menus and planning along with having excellent organisational skills in terms of ordering Responsible for stock room, stock orders & stock counts Must be able to use excel for stock control. Only candidates with a stable track record will be considered Drivers licence essential; and candidates with experience in lodges in Africa will be preferred. interview will take place initially on zoom or teams and thereafter at the lodge. An UPDATED & detailed CV in MS Word format (starting with current position) is required, as well as a Recent head & shoulders photo, taken in the last 6 months.
