About the Role
We are seeking an experienced Food & Beverage Director to join our iconic hotel in Cape Town as part of an international group based in the city. The successful candidate will be responsible for providing the highest level of hospitality in all F&B outlets, achieving total guest satisfaction and organisational profitability through effective utilisation of resources.
Key Responsibilities
- Planning
- Forecasting and Budgeting revenues and costs for the department
- Staffing and scheduling of associates and allocation of duties to maximise associate productivity and minimise payroll costs
- Create a work environment that is high in employee morale, providing constant learning & development
- Develop systems and procedures that achieve higher cost efficiency and guest satisfaction
- Recruitment and Performance Appraisal & Management of associates in the department
- Develop & implement the annual plan using the Business Excellence Model framework
- Manage and lead associates to ensure maximum productivity
- Oversee outlet managers and supervisors with day-to-day running of their departments
- Oversee daily activities of all F&B outlets, including banquets
- Work with outlet chefs on cuisine, menu planning & design for various outlets / banquets
- Ensure regular monitoring of GSTS and feedback, providing prompt, efficient and accurate service to all guests
- Conduct regular meetings with outlet managers and supervisors, constantly monitoring guest concerns, compliments and suggestions
- Organise food festivals and develop guest loyalty and retention programmes
- Compile and review monthly profit and loss statement for various outlets and assist outlet managers with implementation
- Ensure operational standards are followed for equipment & processes
- Maximise F&B profitability by implementing cost containment strategies for all outlets
- Prepare promotion and marketing / PR plans for various outlets and execute the same
- Conduct refresher-training programmes for associates and guide new members of the department
- Maintain regular contacts with corporate and individual customers, building strong relationships with them
- Stay informed about local, national and international best practices / trends
- Develop departmental trainers in association with the training department & oversee all training activities within the department
- Ensure procurement of high-quality raw material and cost-effective equipment
- Adhere to TPAM requirements, ensuring associates are trained and aware of regulations
- Revise manager’s duty list to ensure comprehensive reporting and reconciling
- Perform audits, maintaining positive audit results
- Update KRAs and allocate them to associates, identifying new ones
- Address grievance and counselling issues among department associates
- Ensure safe working practices that do not harm or injure self or others
- Involved in Health & Safety within the department
Requirements
- Grade 12
- Formal hospitality qualification
- At least 2-3 years experience in a similar position
- Fluent in English
- Additional language advantageous
- Experience in luxury hotels
- Knowledge of other hotel services
- Familiarity with Food and Beverage services, including cuisines, menus, accompaniments, wines, beers, spirits, cocktails, tobacco, teas, coffees, other non-alcoholic beverages and the overall dining experience
- Rules of F&B service and service etiquette
