Job Description

About the Role

We are seeking an experienced and skilled Assistant Head Chef to join our team at a luxury lodge in Sabi Sands. As part of our hospitality company, Hospitality and Outdoor Ltd, you will be responsible for managing the kitchen and ensuring that high-quality food is served to our guests.

Key Responsibilities

Plan and prepare menus according to kitchen procedure and timing requirements
Implement and maintain health and hygiene procedures
Oversee junior kitchen staff and provide training and development opportunities
Ensure equipment maintenance issues are reported to the head chef immediately
Exercise portion control and manage stock rotation for mise-en-place preparation of dishes
Provide a handover to the next shift with all responsibilities and guest requests listed
Continuously grow and develop kitchen knowledge and skills

Requirements

Cooking and Hygiene qualifications (Preferred)
A minimum of 3-5 years’ experience in a similar position (Essential)
Experience in a 5-star establishment (Essential)
Assertiveness, patience and good organizational skills
Understanding of kitchen procedure and timing requirements
Passion for cheffing and kitchen related duties
Good communication skills
The ability to implement and maintain health and hygiene procedures
Knowledge of safety procedures and the use of firefighting equipment
First-Aid training
