About the Role
We are seeking an experienced and skilled Assistant Head Chef to join our team at a luxury lodge in Sabi Sands. As part of our hospitality company, Hospitality and Outdoor Ltd, you will be responsible for managing the kitchen and ensuring that high-quality food is served to our guests.
Key Responsibilities
- Plan and prepare menus according to kitchen procedure and timing requirements
- Implement and maintain health and hygiene procedures
- Oversee junior kitchen staff and provide training and development opportunities
- Ensure equipment maintenance issues are reported to the head chef immediately
- Exercise portion control and manage stock rotation for mise-en-place preparation of dishes
- Provide a handover to the next shift with all responsibilities and guest requests listed
- Continuously grow and develop kitchen knowledge and skills
Requirements
- Cooking and Hygiene qualifications (Preferred)
- A minimum of 3-5 years’ experience in a similar position (Essential)
- Experience in a 5-star establishment (Essential)
- Assertiveness, patience and good organizational skills
- Understanding of kitchen procedure and timing requirements
- Passion for cheffing and kitchen related duties
- Good communication skills
- The ability to implement and maintain health and hygiene procedures
- Knowledge of safety procedures and the use of firefighting equipment
- First-Aid training
