About the Role
Misty Hills Hotel, Conference Centre & Spa is seeking an experienced Executive Chef to lead our culinary operations. As part of our team, you will be responsible for delivering exceptional 4-star quality dining experiences while managing large-scale catering events and maintaining strict cost controls.
Key Responsibilities
- Culinary Leadership: Set and uphold high culinary standards in hotel kitchen, ensuring consistency and quality for both à la carte and high-volume banquet service.
- Menu Development: Design innovative, guest-centric menus that cater to diverse corporate needs, seasonal trends, and specific dietary requirements.
- Operations & Logistics: Manage daily food production schedules to ensure the seamless delivery of multiple coffee breaks, buffet lunches, and formal dinners for up to 400 delegates.
- Financial Management: Direct food procurement in collaboration with the procurement department, manage inventory, and implement cost-control strategies to achieve food cost and labour budget targets.
- Team Management: Recruit, train, and mentor a large kitchen brigade of 15, fostering a culture of accountability and professional growth.
- Good communication and interpersonal relations with other department heads.
- Compliance: Maintain impeccable hygiene and food safety standards, ensuring full compliance with International local health regulations.
Requirements
- Education: Professional Culinary Arts Diploma or Degree from a recognized institution.
- Banqueting Expertise: Proven track record in managing large-scale conference and event catering.
- Technical Proficiencies: Strong computer literacy, including Microsoft Office (Excel for costing) and hotel management/POS software.
- Physical & Work Requirements: Willingness to work flexible hours, including weekends, nights, and public holidays as required by the event calendar. Code 8 driver’s licence. First Aid level 1,2 would be an added advantage.
