Job Description

is assisting an award-winning luxury safari lodge in Tanzania to recruit an experienced culinary leader as a This is a hands-on role for a calm, highly organised head chef who can deliver consistent, high-end dining in a remote environment while maintaining tight controls, strong team standards, and exceptional food safety. You will lead from the front in service, mentor and upskill the kitchen brigade, and ensure every meal reflects the lodge’s culinary identity and guest expectations. Success in this position requires strong planning, confident cost awareness, and the ability to adapt menus and execution to logistics, seasonality, and guest preferences without compromising quality. You will also work closely with lodge leadership to align kitchen delivery with overall operations, sustainability goals, and a seamless guest journey from staff dining through to signature experiences. A minimum of 3 years management experience in a medium sized kitchen of an internationally recognized property with exceptionally high standards 3-year Diploma or Degree from a reputable culinary institution is essential for a work visa Up to date with international food trends and menu designs. Understanding of kitchen procedures and timing requirements Knowledge of HR policies and procedures and ability to mentor and train team members. Strong administration, communication, and leadership skills. Knowledge of safety procedures & use of fire equipment. Remote working experience preferred. Excellent interpersonal and communication skills. Procedure orientated, time management and ability to plan accordingly. Stable employment history with contactable references. Lead daily kitchen operations and food quality across all sections, ensuring consistent standards Manage menus, dietary requirements, and overall culinary delivery for guest experiences Control costs, ordering, stock rotation (FIFO), wastage, and kitchen administration Uphold HACCP-aligned hygiene, health and safety compliance, and equipment care Train, mentor, and develop the kitchen team, including performance and discipline support ➡️ A food portfolio must be submitted with your application that clearly displays your creativity, innovation and attention to detail.
