Job Description

About the Role

We are seeking an experienced and skilled Head Chef to join our award-winning luxury safari lodge in Tanzania. As a key member of our culinary team, you will be responsible for delivering exceptional dining experiences that reflect our lodge’s culinary identity and meet the expectations of our discerning guests.

Key Responsibilities

Lead from the front in service, ensuring high standards of food quality and presentation
Mentor and upskill the kitchen brigade to achieve consistent performance
Plan and execute menus that adapt to logistics, seasonality, and guest preferences without compromising quality
Work closely with lodge leadership to align kitchen delivery with overall operations, sustainability goals, and seamless guest experiences
Manage daily kitchen operations, ensuring consistent standards across all sections
Control costs, ordering, stock rotation (FIFO), wastage, and kitchen administration
Uphold HACCP-aligned hygiene, health, and safety compliance, and equipment care
Train, mentor, and develop the kitchen team, including performance and discipline support

Requirements

Minimum of 3 years management experience in a medium-sized kitchen of an internationally recognized property with exceptionally high standards
3-year Diploma or Degree from a reputable culinary institution (essential for work visa)
Up-to-date knowledge of international food trends and menu designs
Understanding of kitchen procedures and timing requirements
Knowledge of HR policies and procedures, including ability to mentor and train team members
Strong administration, communication, and leadership skills
Remote working experience preferred
