About the Role

Hoseki Restaurant on Delaire Graff Estate is seeking a skilled Sushi Chef to join our team and contribute to establishing our reputation as one of the best Japanese restaurants in the area. As a key member of our kitchen team, you will be responsible for managing food stock, handling a wide range of ingredients, and maintaining high quality standards.

Key Responsibilities

  • Creating & preparing a rich sushi menu with various main ingredients and raw fish (e.g., salmon, tuna, unagi)
  • Prepare appetizers, soups, and salads that are close to the philosophy of Japanese cuisine
  • Manage and lead the kitchen staff in head chef’s absence
  • Coordinate with our wait staff to ensure proper cooking, considering special requests and food allergies
  • Provides guidance & training to junior kitchen staff members, including but not limited to line cooking, food preparation, and dish plating
  • Supervises all food preparation and presentation to ensure quality and restaurant standards
  • Oversee and organizes kitchen stock and ingredients, including proper dating and quality assurance
  • Improve waste reduction and manage budgetary concerns
  • Works with head chef to maintain kitchen organization, staff ability, and training opportunities
  • Monitor and maintain hygiene and health and safety principles

Requirements

  • Matric
  • Culinary Diploma preferred
  • Preferably 4 years previous experience in a senior chef role
  • Work experience as a Sushi Chef or at an Asian restaurant
  • Good knowledge of various sushi types and sushi-rolling techniques
  • Own transport with valid driver’s license
  • Ability to work both fast and accurately
  • Leadership and management skills
  • Ability to work in a team
  • Basic computer skills (word, excel, outlook)
  • Exceptional customer-service skills
  • Excellent written & oral communication skills
  • Strong organizational skills
  • Attention to detail
  • Availability to work within opening hours (e.g., evenings, public holidays, weekends)
  • Creative problem-solving skills
