About the Role
We are seeking a creative and hands-on Head Chef to join our luxury safari lodge in Vaalwater, Limpopo, during its pre-opening phase. As a key member of our culinary team, you will be responsible for delivering exceptional guest dining experiences while upholding high 5-star culinary standards.
Key Responsibilities
- Kitchen Leadership & Operations: Lead and manage a small kitchen team (57 staff) to ensure smooth service delivery.
- Culinary Creativity & Menu Development: Design innovative, seasonal, and modern menus that align with our luxury lodge concept and guest experience.
- Stock, Costing & Controls: Manage food cost control and budgeting, oversee ordering, stock management, and supplier coordination to minimize waste and maintain operational efficiency.
- Hygiene & Compliance: Ensure strict hygiene, safety, and HACCP standards are maintained while upholding all kitchen compliance and operational standards.
- Sustainability & Community Focus: Support sustainability initiatives, including the use of on-site grow zone, farm-to-table, and eco-conscious culinary practices. Engage with local community-driven initiatives linked to our lodge ethos.
Requirements
- Minimum 5-star lodge or boutique hotel experience essential
- Strong leadership experience managing small kitchen teams (57 staff)
- Highly creative and innovative culinary approach
- Hands-on, energetic, and driven personality
- Strong understanding of sustainability and farm-to-table concepts
- Valid drivers licence essential
- Willingness to travel/work in Johannesburg during pre-opening phase

Salary & Benefits
Salary: R35;000 per annum. Live-in accommodation provided. 3 weeks on / 1 week off rotation. Opportunity to be part of a luxury lodge launch.
