About the Role
We are seeking an experienced Executive Chef to lead our high-volume seafood restaurant at the V&A Waterfront in Cape Town. As a senior culinary leader, you will be responsible for driving menu direction and cost management, while also developing and managing a large kitchen team.
Key Responsibilities
- Leading and managing a large kitchen team across all sections
- Driving menu development focused on fresh seafood and seasonal produce
- Controlling food cost, wastage, and stock levels
- Maintaining quality and presentation standards across all services
- Recruiting, training, and developing kitchen staff at all levels
- Ensuring compliance with health, hygiene, and food safety regulations
- Reporting to management on targets and performance
Requirements
- Minimum 5 years in a senior chef role with proven Executive or Head Chef experience
- Strong background in high-volume restaurant kitchens
- Solid seafood knowledge and passion for fresh, quality produce
- Hands-on food costing and budget management experience
Qualifications
- Formal education/certifications (if applicable)
Salary & Benefits
Up to R40,000 per month, DOE
