About the Role

The Junior Sous Pastry Chef position at Bright Placements (PTY) Ltd offers a unique opportunity to join our team and contribute to delivering exceptional culinary experiences for our guests. As a key member of our kitchen team, you will be responsible for managing the day-to-day operations of the kitchen under the guidance of the Head Chef and Senior Sous Chef.

Key Responsibilities

• Manage the kitchen under the Head Chef and Senior Sous Chef, adhering to the Standard of Excellence and SOP.
• Ensure the ultimate food experience for guests, aligning with the lodge’s food concept.
• Supervise the quality of food produced and served in a hygienic manner.
• Design menus and implement new food concepts.
• Monitor equipment and product quality, minimizing breakage.
• Implement and maintain Health and Safety procedures.
• Strategically manage food to reduce waste through portion control and stock rotation.
• Train and develop other staff members.
• Assist with stocktakes, orders, and kitchen section management as needed.
• Communicate effectively with departmental teams to meet guest needs and ensure smooth operations.
• Hand over responsibilities and receive handovers from previous shifts.
• Actively participate in promoting Singita’s conservation message and purpose.

Requirements

• Minimum of 4 – 5 years of experience in a pastry kitchen with some supervisory role.
• Understanding of kitchen procedure and timing requirements, able to plan accordingly.
• Wide food knowledge, able to design menus.
• Awareness of dietary needs and restrictions.
• Ability to train and oversee staff, with basic knowledge of labour legislation.
• Passion for the industry and willingness to grow.
• Ability to receive feedback.
• Understanding of hygiene protocols and equipment.
• Sound knowledge of cleaning methods and products.
• Knowledge of safety procedures and use of firefighting equipment.
• First Aid training (provided by company).
• Care in personal hygiene and grooming.
• Good communication skills.
• Stamina for physical activity.
