About the Role
The Junior Sous Pastry Chef position at Bright Placements (PTY) Ltd offers a unique opportunity to join our team and contribute to delivering exceptional culinary experiences for our guests. As a key member of our kitchen team, you will be responsible for managing the day-to-day operations of the kitchen under the guidance of the Head Chef and Senior Sous Chef.
Key Responsibilities
- Manage the kitchen under the Head Chef and Senior Sous Chef, adhering to the Standard of Excellence and SOP.
- Ensure the ultimate food experience for guests, aligning with the lodge’s food concept.
- Supervise the quality of food produced and served in a hygienic manner.
- Design menus and implement new food concepts.
- Monitor equipment and product quality, minimizing breakage.
- Implement and maintain Health and Safety procedures.
- Strategically manage food to reduce waste through portion control and stock rotation.
- Train and develop other staff members.
- Assist with stocktakes, orders, and kitchen section management as needed.
- Communicate effectively with departmental teams to meet guest needs and ensure smooth operations.
- Hand over responsibilities and receive handovers from previous shifts.
- Actively participate in promoting Singita’s conservation message and purpose.
Requirements
- Minimum of 4 – 5 years of experience in a pastry kitchen with some supervisory role.
- Understanding of kitchen procedure and timing requirements, able to plan accordingly.
- Wide food knowledge, able to design menus.
- Awareness of dietary needs and restrictions.
- Ability to train and oversee staff, with basic knowledge of labour legislation.
- Passion for the industry and willingness to grow.
- Ability to receive feedback.
- Understanding of hygiene protocols and equipment.
- Sound knowledge of cleaning methods and products.
- Knowledge of safety procedures and use of firefighting equipment.
- First Aid training (provided by company).
- Care in personal hygiene and grooming.
- Good communication skills.
- Stamina for physical activity.
