About the Role
We are seeking a skilled and passionate Sous Chef to join a dynamic, high-end culinary team in Durban. This is a unique opportunity to support the Head Chef in leading a culturally inspired kitchen that celebrates African fusion cuisine with global flair. As the restaurant embarks on an ambitious new chapter of growth, the ideal candidate will bring precision, leadership, and a deep commitment to consistency and speed of service.
Key Responsibilities
- Lead kitchen line in the Head Chefs absence
- Support daily operations and uphold consistency across service
- Train junior chefs and monitor hygiene standards
- Assist with food costing, ordering, and supplier coordination
- Collaborate on menu execution and seasonal updates
Requirements
- Culinary diploma or equivalent professional certification
- 35+ years in reputable kitchens with prior section or team leadership experience
- Strong foundation in modern Mediterranean, fusion, or fine-casual cuisine
- Proven ability to manage prep, mise en place, and section control
Salary & Benefits
R18;000 – R28;000 (depending on experience and skill level)
Performance bonus (based on food cost %, consistency, and guest reviews)
Meal on duty and uniform provided
Transport assistance for late finishes (case-by-case eligibility)
Incentives commence after a 3-month probation period
