About the Role
We are seeking a highly skilled Senior Sous Chef to join our award-winning restaurant at ProStaffSelect’s ultra-modern game lodge in Hoedspruit. As part of our team, you will be responsible for supervising, controlling, and coordinating daily food production for our unique a la carte restaurant, offering contemporary modern cuisine.
Key Responsibilities
- Supervise and control daily food production
- Coordinate menu planning and recipe costings
- Manage kitchen administration, including general hygiene and people management
- Lead and train junior chefs to ensure high standards of food quality and presentation
- Maintain accurate records of food stocks, menu, and recipe costings
- Collaborate with the Head Chef to develop new menu ideas and specials
Requirements
- 5 years’ work experience in a fast-paced 5* environment
- Excellent verbal and written communication skills in English
- Formal Culinary training is essential
- Thorough understanding of health and hygiene practices for food handlers
- Exceptional knowledge of food preparation and food service for a variety of cuisine styles
- Pastry knowledge will be an advantage
Qualifications
- Formal education/certifications (e.g. National Diploma in Hospitality, Baking and Pastry)
