About the Role
Kendrick Recruitment is currently seeking a talented and passionate Pastry Sous Chef for a prestigious luxury lodge situated in the Hoedspruit area. This is an exciting opportunity for a creative pastry professional who thrives in a high-end hospitality environment and is dedicated to producing exceptional desserts, pastries and baked goods that elevate the guest experience.
Key Responsibilities
- Assist the Executive Chef in the management and operation of the pastry kitchen
- Develop and create innovative, seasonal dessert menus that align with the lodge’s culinary vision
- Ensure the consistent preparation and presentation of high-quality desserts, pastries and baked goods
- Supervise daily pastry kitchen operations, including stock control, ordering and inventory management
- Maintain exceptional standards of food quality, presentation and consistency
- Ensure strict adherence to food safety, hygiene and sanitation standards
- Train, mentor and develop junior pastry chefs and kitchen staff
- Effectively delegate tasks and foster a positive and collaborative team environment
- Assist in controlling food costs through waste reduction and efficient ingredient utilisation
- Maintain accurate production and cost records
- Accommodate special dietary requirements and guest preferences when required
- Occasionally engage with guests during tastings, events and special culinary experiences
Requirements
Diploma or Degree in Culinary Arts with a specialisation in Pastry Arts
Minimum of 35 years’ experience within a luxury hospitality, lodge or high-end restaurant environment
At least 12 years’ experience in a supervisory pastry role
Advanced pastry skills including chocolate work, sugar artistry and artisanal bread production
Strong creativity with a passion for producing visually stunning and innovative desserts
Excellent organisational and time-management skills
Strong leadership and team development abilities
Ability to remain calm and efficient under pressure
Exceptional attention to detail and commitment to excellence
Physically fit and able to meet the demands of a busy kitchen environment
