About the Role
Kendrick Recruitment is seeking an experienced and motivated Assistant Head Chef for a luxury 5-star lodge located in the Sabi Sands. This is an excellent opportunity for a strong culinary professional who is ready to step into a leadership-focused role within a high-end bush environment.
Key Responsibilities
- Assist the Head Chef in the overall running of the kitchen department
- Capable of managing the kitchen independently in the Head Chef’s absence
- Train and mentor the Sous Chef in the preparation of 5-star standard meals
- Contribute fresh and innovative ideas for menu planning and development
- Manage staff meal planning and execution
- Oversee ordering, procurement, and supplier communication for food supplies
- Maintain accurate kitchen administration and use of lodge systems
- Produce and maintain 5-star quality meals for lodge guests at all times
- Ensure exceptional standards in plating, presentation, and dining experience
- Manage stock control, rotation, and stock-taking procedures
- Maintain strict food safety, hygiene, and HACCP compliance standards
- Lead and supervise kitchen staff, ensuring training and performance standards are met
- Maintain strong communication with internal teams and suppliers
- Uphold the highest operational and culinary standards at all times
Requirements
Proven experience in a senior kitchen role within a 5-star lodge or luxury hotel environment
Strong leadership and team management skills
Excellent understanding of kitchen administration and computer systems
Experience in menu planning and high-end culinary execution
Strong stock control, ordering, and cost management abilities
Excellent attention to detail and plating presentation
Ability to perform under pressure in a remote luxury environment
Strong communication and interpersonal skills
Hands-on, proactive, and solutions-driven approach
