About the Role

We are seeking a highly skilled and passionate Chef de Partie to join our culinary team at one of South Africa’s premier destinations. As a dedicated chef, you will have the opportunity to refine your craft in a world-class kitchen while living in a remote lodge environment. We are looking for someone with a strong work ethic, excellent communication skills, and a passion for delivering exceptional dining experiences.

Key Responsibilities

  • Prepare and cook high-quality dishes to exacting standards
  • Maintain a clean and organized kitchen, adhering to health and safety protocols
  • Collaborate with the kitchen team to deliver seamless service
  • Work closely with the culinary manager to develop menus and create new recipes

Requirements

  • Minimum 23 years of experience in a Chef de Partie role within a luxury lodge or high-end culinary environment
  • Formal culinary qualification essential
  • Strong knowledge of modern cooking techniques, plating, and flavor profiling
  • Ability to work well under pressure and maintain high standards consistently

Qualifications

  • Bachelor’s degree or equivalent formal education in culinary arts
  • Matric certificate (if applicable)

Job Description

This role entails preparing and presenting high-quality dishes while maintaining exceptional culinary standards. Creativity, multitasking, and strong communication skills are essential, along with a passion for cooking and the hospitality industry. This is an exciting opportunity for a dedicated chef to showcase their skills in a unique and dynamic environment. Core criteria: A recognized qualification in Culinary Arts/Cooking is required. At least 3 years experience in producing up-market cuisine Demonstrated previous experience in this position at a 5-star Lodge/Hotel Hold a current food handler health card or HACCP/Food Safety certificate Knowledge of GAAP POS and Ms Excel Good knowledge of food costing and wastage control Sober habits Drivers license preferred Good knowledge of F&B Service Strong knowledge of various dietary requirements is essential. Excellent communication and time management skills are required. Ability to multitask and perform efficiently in a fast-paced environment. Commitment to maintaining high standards of kitchen hygiene and food safety. A genuine passion for the culinary industry and a dedication to excellence. Key responsibilities: Knowledgeable and able to produce a variety of authentic and innovative cuisines Support the kitchen management team to ensure that the kitchen is ready for service before the beginning of each shift Stay up to date with changes in policies, ways of working and standards in the industry Responsible for ensuring all equipment, tools, and machinery are properly handled and cared for Follow all standard operating procedures for service to guests, ensuring exceptional food quality is provided to guests at all times Support the kitchen management team to ensure that all kitchen records are appropriately maintained Ensure adherence to all relevant food safety, security and health and safety policies, processes and procedures, ensuring compliance with local legislation Support the other kitchen sections to ensure that the work is completed in a manner that allows guests to receive the highest level of personalised service at all times.
