About the Role

We are seeking an experienced and energetic Food & Beverage Director to lead the F&B function at a new-build 136-room luxury hotel in Benin, opening in December 2026. This is a true ground-up Director of F&B opportunity, where you will shape the F&B identity of a high-profile new property, hire and train the brigades, set the standards, and lead a complex multi-outlet offering from day one of trading.

Key Responsibilities

  • Concept development across each outlet
  • Menu engineering
  • Beverage programming
  • Sourcing and supplier management
  • F&B costing
  • GP and stock control
  • Brigade recruitment and training
  • Day-to-day leadership of service standards across the property
  • Pre-opening planning, soft-opening readiness, and beach club concept build-out post-launch

Requirements

  • Senior F&B leadership experience within a multi-outlet hotel environment
  • Ideally with MICE or business-hotel exposure
  • Pre-opening or new-build experience strongly preferred
  • Genuine passion for current global F&B trends, concept development, beverage programmes, and modern dining formats
  • Demonstrated ability to lead multiple restaurant and bar concepts simultaneously, with high service consistency across each outlet
  • Solid experience overseeing high-volume MICE and conference catering operations
