About the Role
We are seeking an experienced Sous Chef to join our intimate luxury safari camp, where you will take ownership of the kitchen operation within a remote bush environment. As a key member of our operational team, you will work closely with lodge management and staff to deliver exceptional guest dining experiences.
Key Responsibilities
- Oversee daily kitchen operations and assist with the preparation, cooking, and presentation of all meals
- Ensure consistently high standards of food quality, presentation, hygiene, and guest satisfaction
- Execute menus in line with lodge standards and guest expectations
- Manage stock control, ordering, stock rotation, and kitchen administration
- Monitor food costs, wastage, and kitchen controls effectively
- Maintain exceptional cleanliness and hygiene standards throughout all kitchen and storage areas
- Lead, support, and work alongside the kitchen team in a hands-on manner
- Assist with staff supervision, training, and maintaining positive team morale
- Work closely with lodge management as part of a collaborative operational team
- Ensure all health, safety, and food handling procedures are strictly followed
Requirements
- Previous experience within a luxury lodge, safari camp, or remote hospitality kitchen environment
- Strong cooking ability combined with hands-on operational leadership
- Excellent cleanliness, organisation, and kitchen hygiene standards
- Strong stock control and kitchen administration experience
- Ability to manage and motivate a small kitchen team effectively
- Professional, calm under pressure, and team-oriented personality
- Strong communication and interpersonal skills
Qualifications
- Formal education/certifications (e.g. culinary degree or equivalent)
Salary & Benefits
- Salary: R15,000 per month
- Sunday pay included
- Public holiday pay included
- Private bachelor-style accommodation with ensuite bathroom and kitchenette provided
