About the Role
We are seeking an exceptional Head Chef to lead our luxury lodge’s kitchen team in Plettenberg Bay. As a creative culinary professional with a passion for producing innovative, high-quality cuisine, you will be responsible for delivering exceptional dining experiences and leading a high-performing kitchen team.
Key Responsibilities
- Oversee all aspects of kitchen operations, ensuring exceptional food quality and presentation.
- Design and develop seasonal menus that showcase fresh, locally sourced ingredients.
- Prepare and present breakfast, lunch, dinner, and special event menus to the highest standards.
- Lead, train, motivate, and develop the kitchen team.
- Ensure consistency in food preparation, portion control, and presentation.
- Manage food costing, budgeting, and stock control to achieve financial targets.
- Source quality suppliers and maintain strong supplier relationships.
- Monitor inventory levels and oversee purchasing and ordering processes.
- Ensure compliance with food safety, hygiene, and health regulations.
- Maintain a clean, organized, and efficient kitchen environment.
- Work closely with management to enhance the overall guest experience.
- Accommodate dietary requirements and special guest requests.
- Assist with private dining experiences, functions, and special events.
Requirements
- Minimum 5 years’ experience as a Head Chef or Senior Sous Chef within a luxury hotel, lodge, country house, or fine dining establishment.
- Relevant culinary qualification from a recognized institution.
- Strong knowledge of contemporary cuisine and modern cooking techniques.
- Proven experience in menu development and kitchen management.
- Excellent leadership and team management skills.
- Strong understanding of food costing, budgeting, and stock management.
- Knowledge of HACCP and food safety standards.
