About the Role

The Iconic Hotel, part of an international group based in Cape Town, is seeking a highly experienced Food & Beverage Director to lead our F&B team in providing exceptional hospitality and driving organisational profitability. As a key member of our leadership team, you will be responsible for delivering outstanding guest experiences, driving business growth, and ensuring the highest standards of operational excellence.

Key Responsibilities

  • Planning, forecasting, and budgeting revenues and costs for the department
  • Staffing and scheduling associates, allocating duties to maximise associate productivity and minimise payroll costs
  • Creating a work environment that fosters high employee morale, provides constant learning & development, and uses feedback from Employee Satisfaction Surveys to draw action plans
  • Developing systems and procedures that achieve higher cost efficiency and guest satisfaction
  • Recruitment and Performance Appraisal & Management of associates in the department
  • Developing & implementing the annual plan using the Business Excellence Model framework
  • Managing and leading associates to ensure maximum productivity
  • Overseeing outlet managers and supervisors with day-to-day running of their departments
  • Overseeing daily activities of all F&B outlets, including banquets
  • Working with outlet chefs on cuisine, menu planning & design for various outlets / banquets
  • Ensuring regular monitoring of GSTS and feedback provides prompt, efficient, and accurate service to all guests
  • Conducting regular meetings with outlet managers and supervisors, constantly monitoring guest concerns, compliments, and suggestions
  • Organising food festivals and developing guest loyalty and retention programmes
  • Compiling and reviewing monthly profit and loss statements for various outlets and assisting outlet managers with implementation
  • Ensuring operational standards are followed for all equipment & processes
  • Maximising F&B profitability by implementing cost containment strategies for all outlets
  • Preparing promotion and marketing / PR plans for various outlets and executing the same
  • Conducting refresher-training programmes for associates and guiding new members of the department
  • Maintaining regular contacts with corporate and individual customers, building strong relationships with them
  • Staying informed about local, national, and international best practices / trends
  • Developing departmental trainers in association with the training department & overseeing all training activities within the department
  • Ensuring the department procures high-quality raw materials and cost-effective equipment
  • Ensuring TPAM requirements are adhered to and that all associates are trained and aware of TPAM regulations
  • Revising manager’s duty list to ensure all areas of reporting and reconciling is covered
  • Performing audits, ensuring LQA are consistently followed and maintaining positive audit results
  • Ensuring KRA’s are updated and completed whilst identifying new KRA’s and allocating them to different associates
  • Addressing any grievance and counselling issues among department associates
  • Working in a safe manner that does not harm or injure self or others, and being involved with Health & Safety within the department

Requirements

  • Grade 12
  • A formal hospitality qualification
  • At least 2 – 3 years’ experience in a similar position
  • Fluent in English
  • Additional language advantageous
  • Experience in luxury hotels
  • Knowledge of other hotel services
  • Knowledge about Food and Beverage services including cuisines, menus, accompaniments, wines, beers, spirits, cocktails, tobacco, teas, coffees, other non-alcoholic beverages and the overall dining experience
  • Rules of F&B service and service etiquette
  • F&B service skills and other operational skills
  • Professional guest interaction
