Job Description

REQUIREMENT:

– RSA ID and legal residence essential
– Minimum 2 years’ experience as a Head Chef or Senior Sous Chef within a 4-star or 5-star game lodge environment
– Proven experience managing kitchen operations and staff
– Strong menu planning, food preparation, and presentation skills
– Good understanding of stock control, food costing, and budgeting
– Excellent knowledge of food safety, hygiene, and kitchen compliance standards
– Strong leadership and staff management skills
– References are essential
– Own transport advantageous
– Ability to work under pressure in a hospitality environment
– Stable employment history essential
– Candidates with a history of frequent job changes will not be considered

KEY RESPONSIBILITIES:
– Oversee all daily kitchen operations
– Ensure exceptional food quality, presentation, and consistency
– Manage kitchen staff, rosters, training, and performance
– Plan menus and assist with menu development
– Manage stock control, ordering, and supplier relationships
– Monitor food costs and kitchen expenditure
– Ensure compliance with hygiene and food safety regulations
– Maintain cleanliness and organisation throughout the kitchen
– Manage guest dietary requirements and special requests
– Work closely with lodge management to enhance the guest experience
– Ensure efficient kitchen administration and reporting

 

PACKAGE:
– R15,000 – R20,000 (Negotiable – DOE)
– Basic accommodation provided
