About the Role

The Vineyard Hotel is seeking a vibrant and experienced Restaurant Outlet Manager to join our team at Morii Restaurant in Cape Town. As a key member of our hospitality family, you will be responsible for delivering exceptional guest experiences while driving operational profitability. You will work closely with our team to create trendsetting and innovative products and outstanding service experiences that exceed our guests’ expectations.

Key Responsibilities

  • Conduct regular guest service, menu, sales, and standards training with staff
  • Lead teams of people, encouraging teamwork and personal accountability
  • Manage staff processes such as personal presentation, recruitment, performance, and conduct
  • Plan and maintain food and beverage menu offerings and promotions
  • Set and maintain food and beverage service standards
  • Manage daily restaurant operations, including bookings, stock ordering and control, restaurant preparation, cleaning, and hygiene protocols
  • Conduct cash ups and manage financial performance
  • Maintain a neat and professional appearance

Requirements

  • Matric Certificate
  • Qualification from a recognised South African or International Educational Institution
  • Cape Wine Academy, WSET level 2 or 3, and Cocktail Bar courses
  • Experience in a Sommelier role or equivalent with a strong wine and spirit background
  • Fine Dining Restaurant experience and food knowledge
  • At least 3 years’ experience in a similar role in a busy, up-market restaurant
  • Background in using technology, including micros/speed point machines and MS 365
