Location: Eastern Cape, South Africa

Overview

A rare and exciting opportunity exists for a highly creative and operationally strong Development Head Chef to lead the complete culinary redevelopment of two premier 5-star boutique lodges in the Eastern Cape.

This role is ideally suited to a visionary chef with strong fine-dining and luxury hospitality experience, who thrives on concept creation, menu development, and building world-class culinary experiences from the ground up.

The successful candidate will take full ownership of reimagining and implementing the food philosophy across two luxury properties, ensuring the culinary offering becomes a defining feature of the guest experience.

This is a hands-on strategic role requiring a chef who is equally comfortable developing culinary concepts, mentoring teams, and driving consistent execution at service level.

Position Overview

The Development Head Chef will lead a complete revamp of the culinary experience across two luxury boutique lodges located in the Eastern Cape, South Africa.

The role encompasses the full redesign, development and implementation of the food offering, from culinary concept creation through to operational delivery and staff training.

The successful candidate will work closely with lodge management and ownership to establish a distinctive food philosophy focused on seasonal ingredients, regional produce and contemporary fine dining standards.

Key Responsibilities

Culinary Concept Development

  • Lead the complete redesign of the culinary offering across both lodges.
  • Develop a cohesive culinary identity that aligns with luxury boutique lodge experiences.
  • Create seasonally inspired menus highlighting locally sourced Eastern Cape produce.
  • Introduce innovative dishes that balance modern techniques with regional influences.
  • Ensure menus reflect refined yet approachable luxury dining experiences.

Menu Creation & Recipe Documentation

  • Develop and document all new recipes, menu structures, and kitchen procedures.
  • Establish comprehensive recipe manuals and operational documentation.
  • Design breakfast, lunch, dinner, tasting menus, and special dining experiences.
  • Standardise portioning, plating styles, and presentation guidelines.
  • Implement systems to ensure consistency and replicability across both lodges.

Ingredient Sourcing & Sustainability

  • Focus on high-quality, locally sourced ingredients to highlight the regions produce.
  • Build relationships with local farmers, suppliers, and artisanal producers.
  • Promote sustainable and responsible sourcing practices.
  • Incorporate seasonality and regional identity into menu design.
  • Ensure optimal quality control of ingredients and supply chains.

Kitchen Team Development & Training

  • Deliver comprehensive training programs for kitchen teams at both properties.
  • Train staff on:
    • Cooking techniques
    • Food preparation standards
    • Plating and presentation
    • Kitchen organisation
    • Service timing and coordination
  • Mentor and develop chefs to achieve 5-star culinary standards.
  • Introduce best practice kitchen workflows and operational efficiencies.

Operational Implementation

  • Oversee the full implementation of the new culinary concepts across both lodges.
  • Spend time embedded in regular kitchen services, working directly with the teams.
  • Assess current team capabilities and provide hands-on coaching and guidance.
  • Ensure smooth adoption of new recipes, standards, and service protocols.
  • Monitor service execution and maintain consistency and excellence.

Quality Control & Guest Experience

  • Ensure all culinary offerings meet international luxury hospitality standards.
  • Develop signature dining experiences that enhance the overall guest journey.
  • Maintain exceptional standards in:
    • Food quality
    • Presentation
    • Service coordination
    • Hygiene and safety
  • Continuously refine menus based on guest feedback and seasonal availability.

Candidate Requirements

The ideal candidate will be a highly accomplished chef with proven experience in luxury hospitality environments.

Essential Experience & Skills

  • Proven experience as a Head Chef, Executive Chef, or Development Chef in 5-star hotels, luxury lodges, or fine dining establishments.
  • Demonstrated ability to develop and implement new culinary concepts.
  • Strong background in modern fine dining and contemporary cuisine.
  • Experience working with seasonal and locally sourced ingredients.
  • Exceptional menu development and recipe documentation skills.
  • Strong leadership and team training experience.
  • Ability to operate both strategically and hands-on in service.
  • Strong kitchen systems and operational knowledge.
