About the Role

We are seeking an Organic Conscious Farm to Table Chef/Gardener to join our team at HotelJobs in Cape Town, South Africa. The successful candidate will have the unique opportunity to work with a variety of organic produce and herbs in four different climatic zones of Madagascar, creating innovative garden-to-table cuisine for our three tourism properties.

Key Responsibilities

Planning and maintaining an organic kitchen garden in our 3 existing properties
Setting up and managing our 6 hectare farm just outside the capital Antananarivo
Sowing and harvesting crops throughout the year
Collaborating with kitchen staff to design menus based on seasonal availability
Utilizing innovative methods for pickling, jams, chutneys, drying, and preserving harvested products
Sourcing seasonal fruit from other areas of the country
Managing composting and pest control using natural methods
Keeping detailed records of planting cycles and yields

Requirements

Experience in both professional cookery and horticulture
Excellent organisational skills
Enthusiasm for sharing knowledge about sustainable food and gardening practices
Ability to work independently and be flexible
Proactive approach to investigating additional revenue streams for excess product or innovative uses of existing locally sourced goods

Qualifications

Formal education/certifications in horticulture, agriculture, or a related field (if applicable)

Salary & Benefits

Salary: $20,000 per annum (nett) with accommodation and transport provided
30 working days holiday per calendar year
Return flights to/from Johannesburg twice per calendar year
Visa costs covered by MCC
All travel expenses and food costs covered when visiting our properties
