About the Role

The Ehlanzeni: Junior Sous Pastry Chef role is an exciting opportunity to join our team as a key member of the kitchen staff, supporting the Head Chef and Senior Sous Chef in delivering exceptional food experiences for our guests. As a junior sous pastry chef, you will be responsible for managing the kitchen under their guidance, ensuring high standards of quality, hygiene, and safety.

Key Responsibilities

  • Manage the kitchen under the supervision of the Head Chef and Senior Sous Chef, adhering to Standard of Excellence and SOP.
  • Ensure the ultimate food experience for guests, in line with the lodge’s food concept.
  • Supervise the quality of food produced and served in a hygienic manner.
  • Design menus, implementing new food concepts as required.
  • Monitor equipment and products, minimising breakage and maintaining their care.
  • Implement and maintain Health and Safety procedures.
  • Strategically manage food to reduce waste, including portion control and stock rotation.
  • Train and develop other staff members in pastry kitchen skills.
  • Assist with stocktakes, orders, and managing sections of the kitchen as needed.
  • Communicate effectively with departmental teams to ensure guest needs are met and operations run smoothly.
  • Participate in handovers between shifts, receiving and providing information for seamless service.

Requirements

  • Minimum 4-5 years of experience in a pastry kitchen with some supervisory role.
  • Understanding of kitchen procedure and timing requirements, with the ability to plan accordingly.
  • Wide food knowledge, able to design menus.
  • Awareness of dietary requirements and restrictions.
  • Ability to train and oversee staff, with basic knowledge of labour legislation.
  • Passion for the industry and willingness to grow.
  • Ability to receive feedback constructively.
