Curate epic, story-driven gastronomic experiences under African skies
Create menus inspired by local produce and seasonal ingredients including fire, flavour, texture, and theatre in the wild
Create a culinary identity rooted in sustainability and place
Engineer menus strategically
Reduce wastage through intelligent planning
Improve margins while elevating the guest experience
Build a disciplined, inspired culinary team
Requirements:
Grade 12
A formal culinary degree or diploma
At least 5+ years’ experience in a 5* environment
Proven fine-dining leadership experience
Strong remote or lodge kitchen production background
Exceptional food cost control & gross profit management
Wastage reduction strategies and stock optimisation
Menu engineering for profitability without compromising luxury
Strong team leadership and brigade development
Calm precision under pressure
