About the Role
Kendrick Recruitment is currently seeking an experienced and passionate Food & Beverage Manager for a luxury safari lodge situated within the world-renowned Sabi Sands region. This exciting opportunity is ideal for a dynamic hospitality professional who thrives in a luxury environment and has a passion for exceptional dining experiences, team development, and operational excellence.
Key Responsibilities
- Oversee all dining, bar and beverage operations throughout the lodge
- Ensure exceptional food quality, presentation and service standards are consistently maintained
- Collaborate with culinary and strategic consultants to implement menu concepts and seasonal updates
- Monitor food preparation, portion control and service delivery
- Manage special dietary requirements and personalised guest requests
- Stay abreast of industry trends and introduce innovative food and beverage offerings
- Build and maintain strong relationships with quality suppliers
- Manage purchasing, ordering, stock control and inventory systems
- Conduct regular stock takes and ensure accurate inventory management
- Monitor supplier performance and negotiate favourable pricing
- Minimise waste and maximise operational efficiency
- Develop and implement structured food and beverage systems and workflows
- Create and maintain Standard Operating Procedures across all F&B areas
- Ensure compliance with hygiene, food safety and health regulations
- Utilise guest feedback to continuously improve service standards
- Drive operational efficiencies throughout the department
- Lead, mentor and motivate kitchen, service and bar teams
- Implement training programmes focused on service excellence, food standards and hygiene
- Conduct performance reviews and ongoing coaching
- Foster a positive working culture built on accountability and professional growth
- Support and develop team members through structured training initiatives
- Ensure warm, professional and personalised service is delivered at all times
- Engage with guests and anticipate their needs to enhance their overall experience
- Manage guest feedback effectively and professionally
- Drive guest satisfaction through exceptional hospitality and attention to detail
Requirements
Previous experience as an F&B Manager, Executive Chef or similar leadership role within a luxury lodge, boutique hotel or fine dining environment. Strong leadership and team development experience. Proven ability to implement systems and operational structures. Excellent understanding of procurement, stock control and cost management. Experience with menu planning, food presentation and beverage operations. Strong organisational and administrative skills. Passion for delivering exceptional guest experiences. Ability to work effectively in a remote lodge environment.
